Off-duty, he is a tireless tinkerer who treats every vineyard visit as a new system to reverse-engineer.

Simon became one of Sweden's youngest sommeliers in 2003 and went on to lead wine programmes at leading fine dining restaurants across Sweden and Norway. That hands-on service background shapes how he builds partnerships with wineries. He is most at home guiding a guest through a thoughtful pairing or walking a new partner through their first booking.
